Ingredients
- Raised Donut Concentrate 185 g (1 1/2 cups)
- Wheat Flour 1000 g (6 cups)
- Shortening / Butter 50 g (1/8 cup)
- Whole Eggs 50 g (1 pc)
- Dry Instant Yeast 20 g (4 tablespoon)
- Water 500 g (2 cups)
Preparation Method
- Combine all ingredients and mix until smooth and elastic dough is formed.
- a. Planetary Mixer: 2 minutes low 10 - 15 minutes medium. b. Spiral Mixer: 2 minutes low 6 - 8 minutes fast,
- dough temperature 27 - 29OC.
- Dough fermentation: 30 - 40 minutes.
- Sheet to desired thickness.
- Cut with a suitable cutter.
- Arrange on flour dusted tray or a frying screen.
- Proof 25 - 40 minutes.
- Fry in hot oil (175 - 180OC) about 1 minute per side.
- Drain and cool. Finish with donut sugar or icing.
