Raised Donut


Recipe:

Ingredients

  1. Raised Donut Mix 1000 g (6 cups)
  2. Dry Instant Yeast 15 g (1 1/2 tablespoon)
  3. Water 400 g (1 1/2 cups)


Preparation Method

  • Combine all ingredients and mix until smooth and elastic dough is formed.
  • a. Planetary Mixer: 2 minutes low 10 - 15 minutes medium. b. Spiral Mixer: 2 minutes low 6 - 8 minutes fast,
  • dough temperature 27 - 29OC.
  • Dough fermentation: 30 - 40 minutes.
  • Sheet to desired thickness.
  • Cut with a suitable cutter.
  • Arrange on flour dusted tray or a frying screen.
  • Proof 25 - 40 minutes.
  • Fry in hot oil (175 - 180OC) about 1 minute per side.
  • Drain and cool. Finish with donut sugar or icing.
