Recipe:
Ingredients Top Quality Commercial
- De Luxe Sponge Conc 50 g (1/3 cup) 50 g (1/3 cup)
- Cake Flour 150 g (1 cup) 150 g (1 cup)
- Sugar 188 g (3/4 cup) 188 g (3/4 cup)
- Whole Eggs 250 g (5 pcs) 180 g (3 1/2 pcs)
- Water 60 g (1/4 cup) 120 g (1/2 cup)
Preparation Method
- Place egg and water into a mixing bowl.
- Add dry ingredients.
- Whisk for one minute at slow speed.
- Scrape the bowl.
- Whip at top speed for 10 - 12 minutes.
- Place into pans.
Baking Method
Sponge Cake :
- Bake for 25 - 30 minutes at temp. 180OC(Depending on the type of oven).
Swiss rolls :
- Bake for 6 - 8 minutes at temp. 220 - 230OC (Depending on the type of oven)
