Recipe:

Ingredients

  1. Ciabatta Mix 1000 g (6 2/3 cups)
  2. Instant Dry Yeast 10 g (1 tablespoon)
  3. Olive Oil 50 g (1/4 cup)
  4. Water700 g (2 3/4 cups)

Preparation Method

  1. Mix all ingredients with 3/4 of water (525 Grams).
  2. Add slowly the rest of the water and mix until dough is formed. (Dough will become semi-liquid).
  3. Dough temperature approx. 25°C.
  4. Soaking Ciabatta Dough in olive oil for approx.60 minutes for proofing.
  5. Place the dough on a table floured with rye or wheat flour and press it to a thickness of 3 cm.
  6. Divide dough to the desired portions and place onto a floured pan then cover for final proofing.
  7. Final proof 30 minutes.
  8. Baking temperature 230° - 240°C.
  9. Baking time: 20 - 25 minutes with steam.



  • The taste and flavour can be enriched by adding Olive oil / olive pieces to the dough.
