Sponge Cake Emulsifier (Gel Form)

  • Vasilco 169 is a sponge cake improver, made of a vegetable emulsifier blend to improve the cake quality and to keep it’s moisture. The product is an aqueous dispersion of emulsifiers stabilized in a gel form.

Ingredients

  1. Gel Paste (Vasilco 169) 32 g (2 tablespoon)
  2. Sugar 400 g (1 1/2 cup)
  3. Wheat Flour 20 g (2 cups))
  4. Corn Starch 50 g (3/4 cup)
  5. Baking Powder 8 g (1/2 tablespoon)
  6. Whole Eggs 470 g (9 pcs)
  7. Water 200 g (3/4 cup)
  8. Vanilla Flavour 3 g (1 teaspoon)

Dosage:

  • 2 - 3% batter weight

Preparation Method:


  • 1 minute at slow speed.
  • 8 minutes at fast speed.
