Ingredients
- Gold Grain Bread Mix 450 g (3 cups)
- Wheat Flour 450 g (3 cups)
- Instant Dry Yeast 15 g (1 1/2 tablespoon)
- Cold Water 540 g (2 1/8 cups)
Direction for use:
- The recipe of bread requires 50% of Korn Grain Mix blend with 50% whole wheat flour.
Preparation Method
- Spiral Mixer: Mix 4 minutes - slow, 5 - 7 minutes - fast speed. Planetary Mixer: Mix 3 minutes - slow then 10 - 12 minutes at medium speed. Mix until the dough is
- Dough temperature: 26 - 28OC.
- Rest period 20 minutes before scaling.
- Scale 400 - 500 grams and round up.
- Intermediate proofing: 10 minutes.
- Mould dough into shapes (Round or loaf).
- Final proofing: 45 - 60 mins.
- After final proofing make triple slits ondough before baking.
Baking Method :
- Bake at 240OC, then reduce temp. to 190OC with steam.
- Baking time: 30 - 40 minutes depending on oven type.
